Best grilled oysters in Charleston SC!

2 cups butter, softened

1/2 cup finely grated Parmesan cheese

1.2 cup chopped parsley

2 cloves garlic, minced

1 tbsp worcestershire sauce

1 tsp paprika

1/.2 tsp hot sauce

2 dozen large fresh oysters on the half shell

Preheat grill to 450

process first 8 ingredients together in food processor

arrange oysters in a single layer on the grill.  Spoon 2 tsp butter mixture into each oyster; grill, uncovered for 7 minutes or until edges begin to curl

Prices are up throughout Charleston County - most specifically in the Mt Pleasant and the Downtown areas.   Less days on the market, values continue to hold and rise in a solid and stable way

There are plenty of places to eat fresh local oysters in the Lowcountry... but if you like to cook at home, and you have some already shucked oyster, don't forget that not only can you enjoy them raw (yum - with cocktail sauce or melted butter - or just as they are!), steamed, fried and sauteed!

Try sauteeing them in butter - just briefly - not too long - on your stovetop and you will have a delicious treat!

AS RATES MOVE UP...

Mortgage rates have not budged, remaining at historic lows throughout the year amid economic growth that has generated 2.5 million net new jobs over the past 12 months   But uncertainty looms in  light of Federal Reserve Chair Janet Yellen's announcement that the economic stimulus program known as "quantitative easing" will halt by year's end/  Moreover, an increase in the short term Fed funds rate is expected by the middle of 2015.  The course of US monetary policy, in short, will be less accommodating going forward.  Sooner or later rates will rise.

Lowcountry Delicious Shrimp and Crab Finger Scampi... easy and delicious!!

This recipe will make you"almost swallow your tongue" as my mother used to say - it's so good!!


2 tbsp canola oil

20 large, fresh, peeled and deveined shrimp

1 cup dry white wine

20 large crab claws or crab fingers

3/4 cup unsalted butter cut into pieces

3 tbsp finely copped fresh parsley

2 tbsp fresh lemon juice

Kosher salt

freshly ground white pepper


Heat oil in 12 inch skillet over medium heat

Add shrimp cook 2 minutes on each side

transfer the shrimp to a plate


Add white wine to skillet and stir with a wooden spoon being sure to scrape the bottom of the pan

bring mixture to boil and cook 5 to 7 minutes or until the mixture is reduced by half

SHRIMP AND GRITS FOR THE GARLIC LOVER!

Here is a delightful version of the Lowcountry favorite!

3/4 cup of uncooked grits        

1 pinch of cayenne pepper     6 ounces of garlic flavored processed cheese, cubed 

2 tbsp butter                      2 tbsp olive oil

2 cloves garlic                    1 tomato diced

2 lbs of fresh local shrimp, peeled and deveined

1/2 lemon, juiced                 salt and pepper to taste

cook grits   Stir in cubed cheese and cayenne pepper  Keep warm over low heat

Heat butter and olive oil in large skillet over medium high heat

saute garlic and tomato until the tomato softens

stir in the shrimp and lemon juice

saute the shrimp until it is just pink (don't overcook or it gets chewy...
