SHRIMP AND GRITS FOR THE GARLIC LOVER!
Here is a delightful version of the Lowcountry favorite!
3/4 cup of uncooked grits
1 pinch of cayenne pepper 6 ounces of garlic flavored processed cheese, cubed
2 tbsp butter 2 tbsp olive oil
2 cloves garlic 1 tomato diced
2 lbs of fresh local shrimp, peeled and deveined
1/2 lemon, juiced salt and pepper to taste
cook grits Stir in cubed cheese and cayenne pepper Keep warm over low heat
Heat butter and olive oil in large skillet over medium high heat
saute garlic and tomato until the tomato softens
stir in the shrimp and lemon juice
saute the shrimp until it is just pink (don't overcook or it gets chewy)
spread warm grits on a platter
pour the shrimp mixture over the grits
serve immediately and enjoy!!
